INSTRUCTIONS

MIX THE MARINADE

Combine Salt, Pepper, Garlic Powder, Onion Powder, Paprika, Mint, Oregano, Dill, Parsley, Salt, and Black Pepper together to create my Greek seasoning.

MARINATE THE CHICKEN

Coat the chicken with Greek seasoning, EVOO, and fresh lemon juice. Let it marinate for at least 30 minutes to allow all those Mediterranean flavors to work their way into the chicken.

MAKE THE GREEK SALSA

Combine the tomatoes, cucumber, red onion, olives, and garlic in a bowl. Add the lemon juice, EVOO, red wine vinegar, and Greek seasoning. Toss everything together and refrigerate until you are ready to assemble the tacos.

GRILL THE CHICKEN

Preheat your grill over medium-high heat. Grill the marinated chicken until nicely browned on the outside and cooked through to an internal temperature of 165°F. Remove it from the heat and let it rest for several minutes before slicing.

WARM THE PITAS

Give the pita bread a quick warm-up on the grill. You want them soft and pliable with just a little toast around the edges so they can fold like taco shells.

BUILD YOUR GREEK TACOS

Fold each warm pita and fill it with sliced, grilled Greek chicken. Spoon plenty of the fresh Greek salsa over the chicken and finish with a generous sprinkle of crumbled feta.

Mediterranean flavors, taco-night style

Sometimes the best recipes happen when you take flavors you already love and serve them in a completely different way.

These Greek Chicken Tacos bring together everything I love about a loaded Mediterranean meal but serve it taco-style. Instead of tortillas, warm pita bread becomes the shell. Greek-marinated grilled chicken provides the savory base, while a fresh salsa made with tomatoes, cucumber, red onion, olives, garlic, lemon, EVOO, red wine vinegar, and herbs brings brightness and crunch.

Then comes the feta.

A good sprinkle over the top adds that salty, creamy finish that ties everything together. It's somewhere between a chicken gyro and taco night—and that's exactly what makes it so good.
