ROASTED TOMATO SOUP
INGREDIENTS:
5 Large Tomatoes
1/2 Sweet Yellow Onion
1 Head Garlic
Heavy Cream
Broth (Vegetable or Chicken)
PREPARATION:
Large chop tomatoes, onions & garlic.
Season with Olive Oil, Salt, Pepper, & Italian Spices. (optional: Crushed Red Pepper, Basil)
Roast in oven @ 425 for 30-45 minutes.
Blend tomatoes & onions into a puree, add to a stock pot. Add garlic to taste.
Add Broth. Stir in Cream to desired consistency.
Top with pepper & olive oil.
