For the Greek Chicken

  • 1½ lbs boneless, skinless chicken breasts or chicken tenderloins

  • 2 tbsp extra virgin olive oil

  • 2 tbsp Greek seasoning

  • Juice of ½ lemon

For the Greek Salsa

  • 2 cups diced fresh tomatoes

  • 1 cucumber, diced

  • ½ small red onion, finely diced

  • ½ cup olives, chopped

  • 1 clove garlic, finely minced

  • Juice of 1 lemon

  • 2 tbsp extra virgin olive oil

  • 1 tbsp red wine vinegar

  • 1 tsp Greek Seasoning

For Assembly

  • 6–8 pita breads

  • Crumbled feta cheese

INSTRUCTIONS

1. Marinate the chicken.
Coat the chicken with Greek seasoning, extra virgin olive oil, and fresh lemon juice. Let it marinate for at least 30 minutes to allow all those Mediterranean flavors to work their way into the chicken.

2. Make the Greek salsa.
Combine the tomatoes, cucumber, red onion, olives, and garlic in a bowl. Add the lemon juice, EVOO, red wine vinegar, oregano, salt, and pepper. Toss everything together and refrigerate until you're ready to assemble the tacos.

3. Grill the chicken.
Preheat your grill or griddle over medium-high heat. Grill the marinated chicken until nicely browned on the outside and cooked through to an internal temperature of 165°F. Remove it from the heat and let it rest for several minutes before slicing.

4. Warm the pitas.
Give the pita bread a quick warm-up on the grill. You want them soft and pliable with just a little toast around the edges so they can fold like taco shells.

5. Build your Greek tacos.
Fold each warm pita and fill it with sliced grilled Greek chicken. Spoon plenty of the fresh Greek salsa over the chicken and finish with a generous sprinkle of crumbled feta.
